Pavlova

4 egg whites
8 ozs castor sugar
2 small teaspoons vinegar
pinch of salt

Beat egg whites stiffly with pinch of salt and gradually add sugar then vinegar

Turn 8 inch sandwich tin upside down, wet butter paper and place on top of tin and pile mixture on top and flatten out

Place in middle of hot oven - turn oven down as low as possible and cook for 1 hour

This is a good recipe to use in conjuction with Strawberry Flan as you can then use up all the egg yolks
