It is a good idea to create a post once and then create a post new for something new.
When a post is changed the date that it was published on does not change.
If the date does not change then you run the risk of people not reading what you have posted because they may think that it is old news. Also it is important to consider where the post is displayed. Often a post creation date will control where a post is listed. The older the post creation date then the less likely it is that the post will be on the front page or at the top of a lists.
